Red Slaw - Side Dish Recipe

Ingredients
250ml good quality mayonnaise
1 Lime, zest and juice
2 Tbsp cider vinegar
1 Tbsp wholegrain mustard
1 Tsp celery salt
200g White cabbage
200g Red cabbage
1 Red onion, thinly sliced
2 Carrots cut into fine matchsticks (julienne)
Salt and ground black pepper
Instructions:
1. Whisk together mayonnaise, lime zest and juice, vinegar, mustard and celery salt in a small bowl, then season generously.
2. Add cabbage, onion and carrots. Mix well and refrigerate before serving
Tip: Try adding grated beetroot, diced apple or nuts for variety.
