Our Cheddar cheese is supplied by Lye Cross Farm situated at the foot of the Mendip Hills near the village of Cheddar. Here John Alvis and family produce their cheese using traditional methods and skills to produce. `Cheddaring' - the practise of turning and stacking the curds until mature and full of flavour is still in full operation at Lye Cross and helps give the cheese it's distinct flavour.
