Eliminate the gap between cooking and safe storage with the Chefs Range BCC/4008 Integral Roll In Blast Chiller/Freezer — a high-performance, EU-manufactured unit built for medium- to large-scale catering operations, semi-industrial pastry labs, and professional bakeries. Designed to accept a single 2/1 GN or 600 x 800mm bakery trolley, it works in direct tandem with large combi and deck ovens, chilling product from +90°C to +3°C in 90 minutes and freezing from +90°C to −18°C in 240 minutes, with a minimum air temperature of −40°C.

The vertical evaporator with anti-corrosion cataphoresis treatment and three dedicated fans per evaporator ensures uniform cooling across the entire trolley load, with variable air speed from 0.7 to 7 m/s — preventing food dehydration while maintaining rapid temperature reduction. The 7″ touchscreen control panel offers full cycle customisation: chilling, hard chilling, freezing, soft freezing, and five pre-set special cycles including ice cream hardening, fish sanitisation, and bottle cooling. Blast chilling is selectable by time or core probe, and an integrated recipe book stores up to 100 custom programmes. The multipoint needle core probe automatically switches the unit to storage mode on reaching the target temperature, removing the need for manual monitoring.

Built from AISI 304 stainless steel throughout, with 70mm CFC/HCFC-free polyurethane insulation panels (43 kg/m³, U = 0.23 W/m²K) and a reinforced R12-rated anti-slip insulated floor, the BCC/4008 is rated Climate Class 5 — operational up to 40°C ambient. The hot gas defrost system activates only during storage phase, never during an active cycle, protecting product integrity. The evaporator walls are fully accessible for cleaning, and fans stop instantly when the door is opened. The self-closing insulated door features an inner safety release latch and easily removable gasket for straightforward maintenance.

The BCC/4008 is supplied assembled and ready to operate. Systems-Cloud Wi-Fi supervision enables remote monitoring, firmware updates, and HACCP data download from the cloud — reducing engineer callout time and supporting compliance without additional hardware. The USB port allows machine history export in Excel and CSV formats. A stainless steel trolley entrance ramp is fitted as standard. The open 3.5 Hp condensing unit features a BITZER compressor and variable condenser fan speed, sized for reliable operation at 40°C ambient.
